Wrapped up an extraordinary culinary journey as acclaimed Chef Sam Saltos of Hiyaku PDX took over the proprietor’s private residence for an intimate omakase experience like no other.

With just 12 guests each seating and two seatings per night, the energy around the counter was pure magic. Chef Sam delivered traditional-style craftsmanship at the highest level – pairing pristine seafood flown directly from Tokyo’s Toyosu Market with peak Pacific Northwest ingredients, accompanied by our single-vineyard LucidWild wines and rare artisanal sakes.
